Coffee News

El Salvador “La Fany” is now available.

El Salvador “La Fany” is now available. If you like Guatemalan and other Central American coffees, this is a great one to try out. We were very pleasantly surprised at the cupping table when we evaluated this one.

Colombians are back in stock

Colombians are back in stock. The new Brazil and El Salvador coffees will be posted soon.

Old News

2/18/21 – Incoming coffees include La Fany from El Salvador and an equally nice Brazil “Coanop Juarex Colatino Barros” (don’t try to say it to fast – sound it out and it’s not too hard). Both will be available early next week.

Just added to our line-up of Central American coffees – Guatemala Antigua. This coffee comes from the Pastores mill located in central Antigua and is comprised of select small-holder farms (a co-op).

2/15/21 – No more Colombian coffee for a week. For some inexplicable reason we’ve experienced a much higher than usual demand for Colombian coffee. It will be available again by next weekend.

2/7/21 – Brazil Dulcineia dos Santos Black Honey is once again available. The sweetest of the honey-prep coffees, our black honey is amazingly flavorful and vibrant.

12/5/20 Indonesia Blue Dragon is all gone for now. We’re expecting more when the new crop arrives in a couple of months.

12/2/20 Kenya Gatuya Peaberry is back in stock. We ran out for a very short while. This is an amazing coffee for anyone that has not tried it.

11/18/20 – Ethiopia Sidamo “Gora Kone” is now available. Gora Kone is traditional in flavor and cup character for a nice coffee from the Southern region of Ethiopia. This is a shade grown coffee grown under and among acacia a wanza trees. What is a wanza tree? Here’s a picture of one. Note the car underneath. Only in Africa.

11/6/20 – Brazil Dulcineia dos Santos Black Honey is now available. The Gora Kone will be posted soon.

10/31/20 – Coming in late next week, a nice Sidamo from Ethiopia: “Gora Kone“. Also coming back by popular demand, a Black Honey style coffee from Brazil – “Dulcineia dos Santos“. Stay tuned…so many nice coffees are coming in around this time of year.

10/11/20 – Finally, the Geisha is here and is now available. It’s well worth the wait…

9/12/20 – Coming in late next week, a Geisha from Costa Rica. What is Geisha (also known as Gesha from it’s origin)? There are two main strains of coffee – arabica and robusta, with a lesser known strain as liberica. Most specialty coffees consist of varietals of arabica. A much less known and rare coffee varietal is Geisha, with was originally found during the 1930’s in a mountainous region of Ethiopia known as Geis. It then traveled (the seeds) to Central America, mostly grown in Panama and Costa Rica. High on sweetness and various powerful citrus and stone fruit flavors geisha coffees have won many Cup of Excellence awards throughout the world in recent years. It is expensive and in our opinion is one of the only high-priced coffees that justify the cost. Cost for geisha coffees typically start at the same as Hawaiian coffees and go up from there. Stay tuned.

9/6/20 – New microlot from Brazil now available – “Marisella Sauza“. This is a very limited edition coffee that came available to us in only a small quantity. It is a yellow-honey prep, making it a sweeter coffee than it would normaly be using a traditional sun-dried processing method.

8/29/20 – From Guatemala – Huehuetenango Finca El ZapoteThis is a very bright, invigorating coffee. Available now while supplies last.

8/1/20 – From the island of Sumatra – Black Panther. At the cupping table, we were pleasantly surprised at the syrupy body of this coffee, even for a Sumatran, which is typically has fuller body than coffees from other regions. In stock and available now.

6/26/20 Daterra Farms Sweet Blue / Sweet Yellow are back in stock. Brazil Daterra Farms is a scientifically engineered farm using natural processes whose focus is on quality while preserving the local habitat of forests and animals. All coffees produced on this sprawling farm are organic. Sweet Yellow and Sweet Blue is sent to us in vacuum packed bags to preserve freshness (usually unroasted coffee is stored in burlap bags).

6/21/20 – Brazil Dulcineia dos Santos Black Honey is now available. This is an amazing micro-lot coffee that comes from a very remote region of Southern Brazil.

6/15/20 – Exciting new incoming coffees include: new crop Ethiopians – Banko Gutiti (from Kochere region of Yirgacheffe) and Worka Chelbessa (also a Yirgacheffe). Last, but not least an a startling black honey from Brazil is also inbound. They should be available by the end of the week..

Tips for Better Coffee Brewing

Tips for Better Coffee Brewing

The roasting process for coffee beans is a long journey and any mistake along the way can result in drastic, unintended taste difference. Even after the initial crop cultivation at the farm, to the drying and milling process, to transportation and storage of the beans, and the final roasting, coffee can still taste weak and bitter if brewed improperly. Follow these steps below to help you make the most of your coffee beans at home.

This is a basic description of how espresso is properly made using a traditional espresso machine that uses high pressure pump to force water through a portafilter for proper extraction. Note that one cannot come close to achieving genuine espresso using a $50 machine that relies on steam pressure to force water through the coffee grinds.

The history of coffee is filled with pronouncements regarding its effects on coffee drinkers – ranging from coffee’s divine quality to energize a mundane life, to be alternatively matched with edicts banning the evil brew as sinful and deadly to one’s health. [continue reading]

The French Press is thought to have been invented somewhere in France during the mid 1800’s, but the name of the person is not known for sure. It was first patented in 1931 by a fellow named Attilio Calimani (that name does not sound French). [continue reading]

Frequently Asked Questions About Our Coffee House

It is recommended to let coffee beans rest for a certain period of time after grinding before roasting them, to ensure optimal taste. Depending on the beans, you will need to wait anywhere between a few hours to 3 days. The standard coffee shop procedure is to wait 1-3 days after grinding.
After your beans have been grinded, you can brew and drink the coffee immediately. There is no need to wait a certain amount of time after grinding. However, the freshly ground coffee should be used within 1-2 weeks after grinding to ensure the fresh, flavorful taste remain as pure as possible.
The greatest enemies to your coffee beans are air, moisture, heat, and light. Experts recommend storing your beans in an opaque, airtight container at room temperature to ensure the integrity of the roast. While many people like to store beans in clear containers for the aesthetic quality, it is a guaranteed way to compromise taste.
