Brazil José Adão Gomez

This is a microlot-wthiin-a-microlot coffee. It comes from Capricornio Coffees which commercializes coffees from various estates and terroirs which are members of The Four Seasons Project, whose goal is to build high quality, sustainable coffees while paying farmers a reasonable amount for their efforts.

This coffee is a honey preparation which involves pul;ping the washed coffee, then fermenting it to a specific degree to remove the mesocarp (mucilage). Honey processing sort of bridges the gap between wet and natural coffees as the cherry is pulped and then dried for a short period of time with the mucilage layer left on the parchment.  The result is a sweeter, more vibrant coffee.
