This coffee is a honey preparation which involves pul;ping the washed coffee, then fermenting it to a specific degree to remove the mesocarp (mucilage). Honey processing sort of bridges the gap between wet and natural coffees as the cherry is pulped and then dried for a short period of time with the mucilage layer left on the parchment. The result is a sweeter, more vibrant coffee.
