From the Lintong area near Lake Toba, Raja Batak Peaberry is from the same area as our Mutu Batak (different co-op though). It has gone through a triple-pick process in which the coffee is sorted through a manual, labor intensive inspection process three times. The result is that broken, deformed, and otherwise defective coffee beans are removed and only the “good beans” are left. Peaberry coffee makes up approximately 3% of the total harvest and production lot.
Medium-to-full body in the cup with a clean, sweet flavor. From a professional cupper’s standpoint: There are strong notes of pipe tobacco and cedar, which can be otherwise described as elegant. There is a certain amount of brightness that boldly presents itself, unlike most Sumatrans where this brightness is there but is disguised by more of a syrupy body. This coffee is excellent for single-origin espresso and French press in particular. It also works well in standard pour-over and standard machine brewing methods.
