This natural processed coffee comes from
Ayarza Cherry Mill, located on Finca El
Retiro at the border of Guatemala's Santa
Rosa, Jalapa and Jutiapa departments which
is at the sourthern border of the country.
What makes this coffee unique is that
it is a natural, or dry-processed coffee
which is not typical for Guatemalan coffee
beans. Most of the time they go through
a wet (or "washed") process
that enhances fruitiness and brightness
in the cup. By dry processing an already
bright coffee, sweetness is enhanced.
To further enhance the flavors and cup
character, the coffee is grown at the
upper end of coffee-growing atlitudes;
nearly a mile above sea-level. This increases
the growing time and allows the coffee
cherries to fully mature. This coffee
comes to us as a "top lot" from
one of our distinguished Guatemalan importers
and is available in limited quantities.
